Carrot Cake : Just like Mom used to make!

This deliciously moist and flavorful carrot cake was submitted by Jill, who has perfected this gluten-free version of her MIL's recipe using GFJules flour. Packed with freshly grated carrots and spiced with cinnamon, this cake is made extra tender with avocado oil and a hint of vanilla. Whether you're gluten-free or just looking for a classic treat with a healthy twist, this carrot cake is sure to become a household favorite!



Ingredients

2 cups of sugar

2 cups of flour-  I use flour by GFJules and ALWAYS measure by weight.  2 Cups of GFJules flour is 270 grams.  If your gluten free flour does not include xanthan gum, you will need to add it.  Approx. 1/2 tsp per “cup” flour.

3 cups grated carrot

1 teaspoon of salt (I use Kosher salt)

2 teaspoons baking soda

2 teaspoons cinnamon

1 cup oil (I use avocado oil)

4 eggs


MY ADDITIONS:

1 teaspoon baking powder

1 teaspoon vanilla


Mix all together and pour into a tube or Bundt pan that is greased and/or floured (gf flour of course).  Bake at 350 for 55 minutes or until a toothpick comes clean.  Let cool completely on a rack before removing from the pan.

 

FROSTING

1/4 pound butter (I use 1 cup Earth Balance butter)

1/2 pound cream cheese (I use 2 8oz blocks of cream cheese)

1 pound icing sugar (I use 2 cups powdered sugar)

Mix well with a handheld mixer.  This will be more than enough frosting for this cake.   Mom always topped her carrot cake with finely chopped walnuts.
