This delightful recipe was submitted by Georgia, a Toronto based food blogger. These spiced nut and date energy bites are naturally sweetened with honey and packed with raw almonds, walnuts, and a medley of warming spices like cinnamon and allspice. Rolled in crushed pistachios for a bit of crunch, they make the perfect healthy snack or post-workout treat. Best of all, they’re easy to prepare and can be stored for a week of grab-and-go goodness. Whip up a batch and enjoy a burst of flavor and energy in every bite!
Ingredients:
1 cup of raw almonds
1 cup of raw walnuts
½ cup crushed pistachios for rolling
10 pitted dates
⅓ cup honey
½ tsp allspice or 1/4 tsp ground cloves and 1/4tsp nutmeg
1 tsp cinnamon
*makes 14 bites
Steps:
1. Soak dates in hot water for 15 min to soften.
2. Add the pitted dates, nuts, honey, and spices to the food processor and process until everything is well combined and forms a sticky mixture.
3. Take small portions of the mixture and roll them into bite-sized balls using your hands.
4. Roll the bites in chopped pistachios.
5. Place the bites on a baking sheet lined with parchment paper and refrigerate for at least 30 min to allow them to firm up.
6. Store any leftovers in an airtight container for up to 7 days.
